CANADIAN LOBSTER SPLIT

Half lobster with shell together with the meat of the claw and forearm. We remove the viscera from the head and fill that space with the clamp and elbow previously peeled by high pressure. All the lobsters are individually selected, reviewing their size and organoleptic characteristics. We can ensure that all lobsters are alive before the high-pressure and deep-freezing process.
