Tuna (Thunnus albarares / Thunnus obesus) is one of the most consumed species of fish, this is due to its well-known health benefits, such as omega-3 fatty acids and its great protein content (as many or more than the meat).Caught at FAO 87 (Southeast Pacific) and FAO 41 (Atlantic South-West), either with trawls and hook & lines techniques, the fish is deep-frozen on board right after catching, thus not losing the cold chain during the entire process, from its fishing to its final preparation in the kitchens.
