Fridges Arcos cooks and markets the brand of octopus cooked "A Pulpeira", octopus steamed in its own juice.

"A Pulpeira" was born as a result of the continuation of the family business of "pulpeiro and pulpeira" that our ancestors practiced at fairs and festivals in Galicia for more than 100 years. Our origin marks us to try to undertake a mission, a new and improved form of octopus cooking, that manages to maintain and enhance all its flavor and quality. That is why we set in motion a process of research and development of a new method of cooking, based on the knowledge acquired during the years of the octopus and its cooking, combined with the new technologies of food. The result of this research is a new method of cooking in vacuum and steam. We use for it octopus of the highest quality, fish in the best fishery of the world and with the most demanding canons. Once thawed and washed the octopus, we put it in specific bags of cooking, making a vacuum of 100% leaving the octopus ready to be cooked. Our ovens adapted for the steam cooking, do the rest, cooking at low temperatures and prolonging the cooking times. The result is an octopus that cooks little by little, expelling the juices themselves during cooking. This method enhances the taste of the octopus and at the same time stores all its proteins, vitamins and mineral salts in the form of juice. In turn, it extends the shelf life of cooked octopus to 120 days. A 100% natural process.
